shawn’s whole-wheat pancakes

Every now and then, I will post my recipes for various foods I eat. Then I’ll be able to document all my recipes and share them at the same time. The first is a pancake recipe adapted from a standard Cooks.com recipe.
4 servings:
1 cup whole wheat flour
2 tsp. baking powder
2 tsp. honey
1 cup milk
2 eggs
1 tsp. oil
2 tsp. vanilla
2 tbsp. brown sugar
Combine ingredients in large mixing bowl, attempting to break up all clumps of flour. Sifting flour prevents this. Cook cakes in skillet atop medium heat. Add fruit either into mix or sprinkle on top of cakes in or out of skillet as desired.
I doubled the recipe which now has a lower percentage of honey, and oil, while using the whole egg instead of simply the yolk. I also add vanilla and brown sugar. And I simplified cooking instructions. If you have real vanilla, it really adds a great effect. I will sometimes add blueberries or cranberries to this recipe for a twist.
